Close, but these flavors actually combine to create something slightly different, something with a noticeable creaminess, subtle yet refreshing mint flavor, and hints of dark chocolate - mint cookies ‘n cream coffee!

Many enjoy a tasty peppermint mocha in the winter months, but mint cookies ‘n cream coffee hits a bit different, each sip savored with a reminiscent nod to minty chocolate sandwich cookies or even a creamy scoop of mint cookies and cream ice cream swirling in a chilly bath of bold, rich, and smooth medium roast coffee.

I like to think of it this way: if peppermint mochas are made to be enjoyed curled up by a warm winter fireplace, mint cookies ‘n cream coffee is best suited for a sunny walk near the beach.

Actually it’s like enjoying a double-fisted stroll down the boardwalk…

Just picture it - you’ve got a chilly, bold, and delicious iced coffee in one hand, and a waffle cone overflowing with mint cookies and cream ice cream in the other hand - the sun shines above, waves crash nearby, you happily trade sips and samples, switching from one hand to the other…and all is right in the world!

Mint, on the other hand, specifically the pairing of mint and chocolate, or mint and coffee, doesn’t come with an easy explanation.

In other words, science is speechless when it comes to these combos.

Still, these matches make it work…in a very tasty way.

1- Choco-Mint Cold Foam Cold Brew

Who doesn’t love a delicious, creamy, foam resting atop a smooth, bold cold brew?

This recipe combines two of my favorite ways to enjoy coffee - cold brewed and sipped through a foamy topping.

Traditional (hot) brewing methods break down the acidic components of coffee, releasing the oils in the beans and resulting in a slight bitterness in the brew.

Cold brewing, on the other hand, extracts the flavors in the coffee minus this release, making the brew less acidic, less bitter, and more flavorful.

And here you’ll experience both, enjoying the smoothness of mint cookies ‘n cream cold brew through a velvety, rich foam, infusing each glorious sip with decadent dark chocolate, rich cream, and a hint of minty freshness.

*If you can’t tell, I get a little excited about foam topped cold brew, and this one just might be my favorite from our collection today! I hope you enjoy it as much as I do!

Ingredients

  • 8 ounces cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
  • 2 tablespoons half and half
  • 2 ounces dark chocolate almond milk
  • 1-ounce heavy cream
  • ⅛ teaspoon peppermint extract
  • ice

Instructions

  • Add ice to a tall glass. Pour cold brew and half and half over ice, then stir to combine.
  • Add dark chocolate almond milk, heavy cream, and peppermint extract to an electric frother and froth on the cold setting.
  • Pour chocolate mint cold foam over iced coffee and enjoy!

2- Iced Mint Cookie Coffee

Lifeboost mint cookies ‘n cream coffee already tastes like the perfect union of mint cookies and coffee, even so, we’ve decided to take this marriage one step further!

In this recipe you’ll essentially be making a chocolate sandwich cookie paste…minus the cookies!

Using sugar, water, mint extract, and black cocoa powder, here you’ll make a mint chocolate masterpiece to take your ordinary iced coffee to the next level.

Then, add a little half and half and some whipped cream and crumbled cookie topping, and you’ve got a Pinterest-worthy, palate-pleaser sure to wow just about any mint-loving crowd!

Ingredients

  • 6 ounces brewed and chilled (or cold brewed) Lifeboost Mint Cookies ‘n Cream Coffee
  • 2 ounces half and half
  • 2 tablespoons sugar
  • ⅛ teaspoon peppermint extract
  • 1 tablespoon hot water
  • 1 tablespoon black cocoa powder
  • Ice
  • Whipped cream, for topping
  • Crumbled chocolate sandwich cookies, for topping

Instructions

  • In a small bowl, stir together sugar, peppermint extract, and hot water until the sugar dissolves.
  • Add black cocoa powder to the sugar syrup, and mix until a paste forms.
  • Add mint cocoa paste, cold brew, and half and half to a glass measuring cup, (I used a 2-cup measuring cup for extra stirring space.) and whisk until combined.
  • Add ice to a tall glass and pour coffee mixture over ice.
  • Top with whipped cream and cookie crumbles. Enjoy!

3- Creme De Cookie Menthe

While mint cookies and cream iced coffee is truly wonderful, this treat can be further enhanced with a few adults-only boozy additions.

This coffee cocktail ups the ante with not only creme de menthe, but a bit of Bailey’s Irish Cream as well.

Traditional Bailey’s Irish Cream liqueur includes both vanilla and chocolate flavors, each of which nicely complements this brew.

But, if you’d like to kick this one up another notch, feel free to add about an ounce of Irish Whiskey as well…just turn in your car keys prior to sipping, of course.

Ingredients

  • 6 ounces brewed and chilled Lifeboost Mint Cookies ‘n Cream Coffee
  • 1 ounce creme de menthe
  • 1 ½ ounces Bailey’s Irish Cream liqueur
  • 1 ounce heavy cream
  • Ice
  • Whipped cream, for garnish
  • Chocolate sandwich cookies, crumbled, for garnish

Instructions

  • Add coffee, creme de menthe, Bailey’s, heavy cream, and ice to a cocktail shaker and shake until well combined.
  • Add ice to a cocktail glass, and strain mixture over ice.
  • Top with whipped cream and a desired amount of cookie crumbles. Enjoy!

4- Mint Cookie Frappe

Call it a copycat, call it a dupe for other-named menu favorites, either way, we call it incredibly delicious!

This mint cookie frappe rivals menu options far and wide, combining coffee, cream, chocolate sauce, mint chocolate cookies, and more.

Trust us when we say, a single sip simply won’t do!

Ingredients

  • 8 ounces cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
  • ⅓ cup sweet cream coffee creamer
  • 2 tablespoons chocolate syrup, plus extra for topping
  • 4 mint chocolate sandwich cookies
  • 2 tablespoons chocolate chips
  • 1 ½ cups ice
  • Whipped cream, for topping

Instructions

  • Add coffee, creamer, chocolate syrup, cookies, chocolate chips, and ice to a blender. Blend on high until smooth and creamy.
  • Pour blended mixture into a tall glass, top with whipped cream and a drizzle of chocolate syrup and enjoy!

5- Creamy Mint Milkshake

One very vivid memory I have from my childhood involves my mother, her mixer, and a stainless-steel mixing bowl.

When I was very young, about 4-5 years old, my mom used to make milkshakes for our family in a large stainless steel mixing bowl with the help of a hand mixer.

Later, she bought a blender and made milkshakes in a simpler way, but there must’ve been something magical in the combination of that steel bowl and her trusty handheld mixer, because my taste buds can’t seem to recall the later milkshake mixes in the same tantalizing manner as those made in earlier years.

Usually she’d combine vanilla ice cream, milk, and chocolate syrup for a classic chocolate shake, but one evening she randomly added a few drops of peppermint extract, and my brothers and I really thought we’d somehow achieved the status of royalty!

Mint chocolate milk shakes? What a treat!!

Of course, after this we almost always requested that minty addition, a little something extra to put those homemade shakes over the top.

And, while this recipe doesn’t require a hand mixer or a large stainless steel mixing bowl, one sip certainly took me back…back to those fun Friday evenings when my brothers and I lived like kings and queens (at least in our young minds) enjoying mint chocolate shakes without a care in the world!

Ingredients (serves 2)

  • 8 ounces cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
  • 3-4 scoops mint cookies and cream ice cream
  • ⅓ cup heavy whipping cream

Instructions

  • Add all ingredients to a blender and blend on high until thick and creamy.
  • Divide between two glasses and enjoy with a friend!

*If the mixture is too thick, simply add a little more coffee. If the mixture is too thin, opt for another scoop of ice cream.

6- Mint-Cocoa Coffee

Have you ever sipped on frozen hot chocolate? If so, then you know how incredibly delicious this treat can be!

Here, we’ve taken the notion of frozen ho-cho to the next level with the addition of coffee and refreshing peppermint!

Using our mint cookies ‘n cream coffee as well as an extra touch of peppermint and some homemade chocolate sauce, this treat is hard to beat!

Bonus - feel free to elevate this recipe even more by including some chocolate sandwich cookie crumbles on top! Then, if you’re planning to snap a pic for a tantalizing social media post prior to sipping, add a sprig of fresh mint for a bright pop of color!

Ingredients

  • 6 ounces cold brewed Lifeboost Mint Cookies ‘n Cream Coffee
  • ¼ cup milk (your choice, dairy or nondairy)
  • 1 tablespoon chocolate sauce (see recipe below for homemade version)
  • 1 cup ice cubes
  • ⅛ teaspoon peppermint extract
  • ¼ cup heavy whipping cream

Instructions

  • Add heavy whipping cream and peppermint extract to a chilled bowl, then mix with a hand mixer until soft peaks form. Set aside.
  • Add coffee, milk, chocolate sauce, and ice to a blender and blend on high until smooth and icy.
  • Pour blended coffee into a tall glass, then top with peppermint whipped cream. Enjoy!

Homemade Chocolate Sauce

  • ¼ cup pure maple syrup
  • 2 tablespoons unsweetened cocoa powder

Add syrup and cocoa powder to a bowl and whisk until fully combined. Store in an airtight jar in the refrigerator for up to two weeks.
