In the late 1980’s The Beach Boys released the hit song Kokomo

And, in case you’re not already singing the lyrics quietly to yourself, let’s review a few lines:

“Off the Florida Keys, there’s a place called Kokomo. That’s where you wanna go to get away from it all. Bodies in the sand, tropical drink melting in your hand…” 

The thing is, no matter what part of the country you were from, and no matter whether you’d ever visited the tropics prior to hearing those lyrics, you could vividly imagine the escape described by this song. 

I mean, who didn’t want to go down to Kokomo, where you could enjoy “taking it slow...getting away from it all.” 

So then, now that we’re all thinking of sun, sand, relaxation, and refreshment - taking it slow and getting away from it all - what tropical drink (that’s melting in your hand) comes to mind? 

If you’re like most folks, chances are that drink contains coconut

Whether you’re a sun and sand fan or not, the mention of coconut or a coconut flavored beverage generally sends one’s thoughts on a tropical excursion. 

Coconut...vacation....tropics...refreshing...rejuvenating...those words are nearly synonymous, with each one evoking thoughts of the other. 

But, what does any of this have to do with coffee?
I’m glad you asked!

Yes, I realize the place mentioned in the hit Beach Boys song doesn’t truly exist, but this refreshing, all natural flavor combined with our clean, single origin, medium roasted, premium Arabica coffee beans immediately transported my mind to the islands! 

In fact, I was so refreshingly impressed, I decided to come up with 10 recipes, 10 simple ways to enjoy and even enhance this brew, to satisfy any desire to take it slow and get away from it all each and every day. 

Whether it is cold outside and you want to escape to warmer thoughts, or you are simply wishing for the sand beneath your feet, these recipes will bring the tropics to your kitchen each time you indulge! 

But, before we get to the recipes, let’s take a quick look at the coconut fruit itself…

Why do thoughts of this fruit evoke such tropically relaxing feelings?

Coconut Origins


The coconut is a fruit, possibly one of the most intriguing in appearance. And, it is most abundantly found throughout the tropics. 

The discovery of the coconut is generally credited to Portuguese explorers who gave this odd fruit its name. 

Those who discovered the fruit, on islands in the Indian Ocean, thought its outer brown shell with its three holes and rough hairy-like texture looked very similar to a monkey, thus they named the fruit “coquo,” which means small animal. 

Coconut trees are often found flourishing in coastal areas, and this is thought to be due to the fruit’s buoyant and “colonizing” (easy to germinate) nature, “allowing them to float on the sea without losing their ability to germinate.” 

And, I suppose it's those tropical origins that transform our thoughts from the office to the islands at just the mention of the coconut. 

But, islanders don’t view the fruit as exotically as most, to those to whom the fruit is far more common, they see it for what it really is: a food with many benefits! 

From the coconut tree’s roots, trunk, and leaves, to the fruit’s fiber, oil, milk, and meat, the coconut has been used for everything from furniture to biodiesel fuel! 

However, the greatest benefits to be had from the coconut come in the form of food and medicine. 

In fact, the coconut contains so many benefits, including it as part of a traditional island diet is one of the reasons Pacific islanders (particularly) are thought to live such long and healthy lives. 

Coconuts for Your Health


For me, just the thought of coconut makes me think of lying in the sun, taking a break from the stresses of the day, and enjoying the simplicity of the moment. And, that alone can relieve anxiety. 

But, the benefits of coconuts go far beyond relaxing thoughts. 

The sweet meat of the coconut is often pressed and grated to make milk and cream, and I’m sure you’re familiar with dried coconut meat which we often use in grated or shredded form when baking, topping smoothie bowls, or as an ingredient other healthy and delicious concoctions. 

When you use this tasty fruit in any of these forms, you are providing your body with needed nutrition! 

While coconuts are a great source of healthy fat, they also contain: 

  • protein
  • some B vitamins
  • copper

Iced Toasted Coconut Coffee Recipes


1- Chilly Willy’s Coconut Craze


Chilly Willy the penguin was frozen through and through, and let me tell ya, on hot summer days I get a little jealous of Chilly Willy!

So, when the humidity is high and the temps are blaring hot, Chilly Willy’s Coconut Craze just hits the spot! 

Slightly sweet, totally tropical, and so very delicious...I especially love to enjoy this frosty coconut coffee treat on hot summer days! 

Ingredients

  • 12 ounces, divided, cold brewed Lifeboost Toasted Coconut Coffee
  • ½ cup coconut milk
  • 1 tablespoon unsweetened flaked coconut
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons cane sugar (or a few drops liquid stevia)
  • Whipped cream (optional for topping)
  • Toasted coconut (optional for topping)

Directions

  1. Pour 8 ounces of cold brewed Lifeboost Toasted Coconut Coffee into a standard ice cube tray. Place into the freezer for 3-4 hours or until completely frozen. 
  2. Add ice cubes, 4 ounces cold brew, coconut milk, unsweetened coconut, vanilla, and sugar to a blender. Blend on high until smooth. 
  3. Pour into a glass and top with whipped cream and toasted coconut. Enjoy!

2- Sometimes You Feel Like a Nut


Okay, raise your hand if you finished that phrase…

Yep, those of you who are familiar with the late 70’s (and all through the 80’s) commercial jingle are probably already salivating thinking of the chocolate, coconut, and almond (if you’re feeling nutty) combination there. 

And, even if you’re not sure of what jingle we’re referring to here, I am sure you’ll soon salivate as you think of the flavors of this Almond Joy-esque coffee concoction. 

Rich dark chocolate almond milk, refreshing Toasted Coconut coffee, and creamy homemade coconut whipped topping...soooo delicious...you know, for the times you feel like a nut. ;) 

Ingredients 

  • 6 ounces cold brewed Lifeboost Toasted Coconut Coffee
  • 4 ounces dark chocolate almond milk 
  • 13.5 ounce can coconut milk, chilled
  • 1 tablespoon maple syrup
  • Chocolate sauce for drizzling (see homemade recipe below)
  • Ice

Directions

  1. Scoop out the hardened coconut cream from the chilled can of coconut milk into a medium sized bowl. (You won’t be using the leftover coconut water here, but you can always store it in the refrigerator for later use.)  Add maple syrup and mix with a hand mixer until soft peaks form. Set aside while assembling the coconut coffee drink. 
  2. Add ice to a glass, pour in cold brew and dark chocolate almond milk, stirring to combine. 
  3. Top with whipped coconut cream, then drizzle with chocolate sauce. Enjoy! 

2 Ingredient Vegan Chocolate Syrup

  • ¼ cup maple syrup
  • 2 tablespoons unsweetened cocoa powder

Add syrup and cocoa powder to a bowl and mix until well combined. Use immediately or store leftover syrup in a sealed container in the refrigerator for 1-2 weeks.

3- Vietnamese Please!


Vietnamese coffee isn’t just a trend, it’s an incredibly delicious treat! 

And, part of that decadent deliciousness comes from the sugary element of Vietnamese coffees, sweetened condensed milk. 

This thick, rich, and super sweet addition to this (and most all) Vietnamese coffee was birthed out of necessity. 

Due to a lack of availability of fresh milk in Vietnam many years ago, sweetened condensed milk, a more shelf stable product, was often used in coffee to provide both a creamy and confectionary component. 

Now, the trend is sweeping many nations, along with another classically Vietnamese coffee flavoring: coconut. 

And here, you’ll get both offerings, combining to create a sinfully sweet, tropically refreshing treat! 

Ingredients

  • 6 ounces cold brewed Lifeboost Toasted Coconut Coffee
  • ½ cup unsweetened coconut milk 
  • 1 ½ tablespoons sweetened condensed milk
  • Ice

Directions

  1. Stir together coconut milk and sweetened condensed milk until fully incorporated. 
  2. Add ice to a glass, top with sweetened coconut milk mixture and cold brew. Stir if desired, and enjoy! 

4- Livin’ in a Vanilla Paradise

This tropical treat may not be as cool as Coolio (shameless, not so subtle reference to some classic 1990’s rap), but it’s just the kind of refreshing coolness you need on a hot summer’s day, or warm spring day, or cool fall day...okay, is there really a time when you don’t want to enjoy flavors of perfectly roasted, bold coffee, tropical coconut, and velvety vanilla?

Ingredients

  • 8 ounces cold brewed Lifeboost Toasted Coconut Coffee
  • ½ cup unsweetened coconut milk 
  • ½ tablespoon honey
  • 2 teaspoons pure vanilla extract
  • Ice
  • Whipped cream, optional for topping

Directions

  1. Add coconut milk, honey, and vanilla to a small saucepan and heat over low heat until mixture is fully combined and warmed through. Set aside to cool completely. 
  2. Add ice to a tall glass, pour in sweetened vanilla coconut milk. Top with cold brew and stir. 
  3. If desired, top with whipped cream, and enjoy! 

5- Coffee Colada


Move over piña colada, you’ve got some serious competition! 

Sure, an icy piña colada enjoyed poolside or with your toes in the sand is great and all, but that beloved drink has always been missing something.

And, what could make such a refreshing drink taste even better…even more refreshing? 

Coffee, that’s what!

Ingredients

  • ¼ cup pineapple juice
  • ½ cup heavy cream
  • ¼ teaspoon coconut extract
  • 1 teaspoon pure vanilla extract 
  • A few drops liquid Stevia
  • Ice

Directions

  1. Add ice to a glass. Pour in cold brew, a few drops of stevia (if you’d like, it’s very refreshing without sweetener as well), and pineapple juice. Stir to combine. 
  2. Add heavy cream, coconut extract, a few drops of stevia, and vanilla to an electric frother and select the cold froth setting. (This will produce more than needed, but this amount keeps the cream from whipping instead of simply thickening.) 
  3. Top coffee mixture with frothed heavy cream, and enjoy!

1- You Put the Coffee in the Coconut

  • ½ cup whole milk 

Directions

  1. Brew Lifeboost Toasted Coconut Coffee and pour into a large mug. Add caramel syrup to coffee and stir to combine. 
  2. Add milk to an electric frother and select the heat and froth setting. 
  3. Pour frothed milk over the caramel coffee mixture, and drizzle with extra sauce if desired. Enjoy! 

Caramel Syrup

  • 1 cup cane sugar
  • 1 cup boiling water

Heat cane sugar in a medium saucepan over medium high heat, stirring constantly, until the sugar is melted. If the sugar burns, you’ll need to start over. Once the sugar is completely melted, slowly add 1 cup boiling water to the melted sugar. Be careful of the steam. Stir until completely incorporated, then cook for another 15-30 seconds. Remove from heat and allow the syrup to cool completely before storing in an airtight container in the refrigerator until needed. 

3- Mochanut Delight


Coffee, coconut, and chocolate are such a delightful trio! 

I mean, coffee and coconut pair wonderfully. And, coffee and chocolate are classically delicious. Even coconut and chocolate make a great pair! 

So, it’s no wonder the combination of all three of these decadent flavors makes such a tasty treat! 

The chocolatey foam graces your lips first, fluffy and sweet. Followed by flavors of bold coffee, tropical coconut, and creamy chocolate.

Ingredients

  • ½ cup whole milk 
  • Chocolate sauce (optional for drizzling)

Directions

  • ¼ cup maple syrup

4- Spice of Life

Ahhh, I’m even dreaming of how I can make this one iced as well for a refreshing poolside treat. 

Hint: To make the iced version of this delicious dream of a drink, simply add some cold brewed Toasted Coconut coffee to an ice filled glass, stir in some cane sugar (or use a few drops of liquid stevia for better dissolving), then use an electric frother to froth the heavy cream, sugar, and coconut extract on the cold froth setting.
