The Lowdown on Organic Coffee


First things first - what is organic coffee actually, and how is it different from “normal” coffee?

Coffee that is certified “organic” has been through a carefully-managed growing process and rigorous testing and certification procedures. Regulatory requirements differ from country to country, but here in the USA, the US Department of Agriculture (USDA) is responsible for putting that organic stamp of approval on products that meet this standard.

Plots growing organic coffee beans must be completely free of synthetic pesticides, not just per crop. The soil must have been synthetic-pesticide-free for at least three years. (Now you know you’re playing in the big leagues.)

Natural repellents may be used to keep bugs (like the coffee berry borer) from gobbling up the coffee berries while they’re growing - and birds safe as they won’t be tempted to eat those chemical-bearing borers. Organic farmers also use some pesticide sprays like Cinnamomum and copper sulfate.

The coffee plots should also not displace existing bugs and birds from their natural habitats. We love this because we’re eco-friendly folk here at Lifeboost Coffee, and we like to know that our cuppa joe hasn’t harmed any animals (or insects) in the making.

Many coffee plantations are grown either completely or partially in the shade, allowing nature to thrive around the coffee plants - and encouraging insects and birds that feed on coffee berry pests to be completely at home around the plants.

Once the berries are ripe, they are carefully picked - and if we’re going hardcore organic, put in chemical-free bags - to transport to the roasting machines. 

The roasters themselves may only be used to toast organic coffee beans. This is because there may be residue from chemicals that remain in the roasters should they be used to toast berries grown and farmed using synthetic pesticides.

Roasting is done cleanly with nothing added to the beans as they toast up and develop those divine flavors that you enjoy in your cup.

What Do You Mean Mold? Since When Does Coffee Get Mold?


Coffee beans are like any other food product - if processed or stored incorrectly, they can grow mold (and we don’t think “mold” is a flavor you’d like included in your coffee’s flavor profile - we certainly wouldn’t). 

Coffee beans may have mold spores on the surface of the coffee before they reached your coffee maker. 

If a part of the prep or packaging process is flawed, then those spores can take a lovely holiday with your coffee beans and start a mold family in your cupboard (pretty distasteful). 

So we make sure that our beans are thoroughly tested for mold spores so that they are as clean as whistles when they are packaged and delivered to you with love.

What Are Mycotoxins?


According to the World Health Organization WHO, mycotoxins are “naturally occurring toxins produced by certain molds (fungi) and can be found in food”. So that mold can really go to town on your coffee beans.

These toxins can cause mild to severe health problems, such as immune deficiency and certain cancers. So it’s pretty important to know if your coffee beans have been tested or not.

If you’re looking for a deeply-rich, bold and powerful coffee kick, the Embolden Dark Roast is a great option. The Difference Between Dark, Medium, and Light Roast


It all starts with the length of time that the coffee beans are roasted. Dark coffee beans are roasted longer than medium roasted beans, which are roasted longer than lightly roasted beans.

Dark Roast


  • Characterized by a dark, glossy bean because of the oils drawn out in the roasting process.
  • Robust and full flavors, and takes on the smoky flavors from the roasting process.

Medium Roast


  • Start to take on a bit of the flavor of the roasting process, losing the bright florals and taking on a more balanced flavor.
  • It can also be referred to as Breakfast Roast, American Roast, or City Roast.

Light Roast

  • There is often more caffeine in a lighter roasted bean (because the roasting process can draw out caffeine).
  • Roasting stops at the first “crack” of the bean.

This beaut is sourced (single-origin, of course) from Central America, in the mountains of Nicaragua. We call it Midnight Roast because of its gorgeous dark coloring - but there’s a hint of chocolate in there too for you chocolate lovers (but without any of that sugar that comes with chocolate).

With that said, stir in some double cream and sugar to taste and you’ll be bewitched by the rich and voluminous flavor (midnight is, after all, the witching hour…).

How You Get Chocolate Flavor in Coffee


There are two ways to infuse coffee beans with flavor. One is by adding the specific flavors you want the coffee drinker to taste, and the other is through flavors that come about through the growing and roasting processes.

Flavors Through Growing and Roasting


We find the natural flavoring process quite magical. The soil in which the coffee plants grow influences their flavor. Things like acidity, rain and sunlight levels, elevation, temperature, etc., all influence the flavors you taste in your cup of coffee.

Then there’s the harvesting time - coffee berries that are picked with they are super ripe will result in a sweeter, cleaner, and smoother flavor. 

But the processing of the berries is one of the biggest factors in determining their flavors and aroma. There are four main techniques used: washed, wet-hulled, honey, and natural. 

Naturally processed coffee beans will have a juicier, more syrupy flavor; while washed beans will have a cleaner and crisper flavor. Wet-hulled coffee is more heavy-bodied, nutty, and chocolatey; and honey-processed coffee is more acidic, juicy, and syrupy.

And of course, the roasting process, which varies in length depending on whether the roaster is looking for a light, medium, or dark roast, can bring out flavors in the coffee that we identify with other ingredients like peaches, florals, nuts, chocolate or caramel.

Added Flavors


A cup of flavored coffee can be like a sip of heaven. Imagine tasting Maple Cinnamon French Toast or Pineapple Upside-Down Cake.

These coffees get their delightful flavors from essential oils and flavor extracts that are used to flavor the coffee beans.

Organic Medium Roast Coffee


Now if you’re looking for something in-between - not too robust, but not too light and feathery either - an organic medium roast coffee is where it’s at. 

A deeper color and flavor than light roasts, medium roast coffee beans also have no oil on the surface of the bean, as the heat wouldn’t have reached high enough to start that divine oil extraction process, that makes your dark roasts ooze with a smoky flavor.

A medium roast is sweeter than a light roast and is beautifully balanced with more body and higher acidity. By not roasting the beans to dark roast level, you can really taste those natural flavors that have grown and developed with the coffee bean, giving you a smooth and very “present” cup of coffee.

And what’s more, if your body doesn’t react well to caffeine, you can get a decaf version that hasn’t lost any of the flavor or aromas.

What’s the Buzz About Decaf?


Decaf coffees have gotten a bad rap for having chemicals pumped through them to remove the caffeine, ending up putting residues of those chemicals into your body. But some clever people somewhere developed some nifty methods of gently removing the caffeine without removing the flavor - and without using any chemicals.

Lifeboost decaf coffees are decaffeinated in a way that respects the coffee beans, the organic designation of the beans, the care taken in growing them, the roasting process, and most importantly, the taste buds of you, the coffee drinker.

There are two ways to take caffeine out of organic coffee beans - the Swiss Water Method, and the Carbon Dioxide Process. Each of these is a slow and tender process that uses pure water or CO2 to gently remove the caffeine from the coffee beans, leaving them caffeine-free, but packed with the same flavor as their high-kicking counterparts.

Medium Roast Decaf


Hand-picked, spring-water washed and then bathed luxuriously in the sun to dry - Lifeboost coffee beans really get top-class treatment (look, we’d even massage the beans if we thought it would bring more flavor to your cup.)

After they’ve rested for 30 days - which encourages the taste-enhancing richness to be released - the green beans then go through the decaffeinating process. This eases the caffeine out of the beans, so we’re left with pure coffee goodness - and no caffeine. Roasting is next, and then…well, you know the process now.

This medium roast has a nice, rich, and bold flavor, with an undercurrent of chocolate and caramel that brings a natural sweetness to the coffee. Its low acidity and unique flavor make it a cup that you just want to keep on refilling.
